Cellar Master Séverine Frerson Makes Her First Visit to Hong Kong and An Extraordinary Champagne Pairing Experiences Presented by Gaddi’s Chef de Cuisine Anne-Sophie Nicolas as a Perrier-Jouët Society Chef.

Since its founding, Maison Perrier-Jouët® has drawn profound inspiration from nature, earning international acclaim for its floral, elegant, and intricately crafted champagnes that reflect the House’s enduring passion for art and the natural world. In celebration of Hong Kong’s Art Month, the Perrier-Jouët® House of Wonder returns, to unveil an immersive expression of the Maison’s creative universe. This year, the House is honoured to welcome its esteemed Cellar Master, Séverine Frerson, on her inaugural visit to Hong Kong for a series of exclusive events and collaborative experiences. As part of this visit, she will collaboration with Anne-Sophie Nicolas, Chef de Cuisine of Gaddi’s, the Michelin-starred French Restaurant at The Peninsula Hong Kong, as a Perrier-Jouët Society Chef. This milestone collaboration brings together two institutions defined by heritage and artistic vision, marking a significant moment for both the Maison and Hong Kong’s gastronomic landscape.

This collaboration also celebrates the coming together of two pioneering female leaders in the worlds of champagne and haute cuisine. Appointed in 2020, Séverine Frerson is the first woman to serve as Cellar Master in Maison Perrier-Jouët’s 200-year history, entrusted with preserving the House’s delicate balance and unmistakable floral style. Likewise, Chef Anne-Sophie, who assumed leadership of Gaddi’s in 2024, is the first female Chef de Cuisine in the restaurant’s 72-year legacy, bringing a fresh and contemporary interpretation to its iconic French fine dining tradition. Together, they embody a shared commitment to craftsmanship, creativity, and the expressive dialogue between nature and gastronomy.

Perrier-Jouët Society ── The Artisans of Nature
In 2023, Maison Perrier-Jouët® expanded its brand presence by establishing the “Perrier-Jouët Society” in Hong Kong. This initiative connects world-renowned chefs who possess a deep understanding of the harmony between nature, art, and gastronomy. These culinary artists are passionate about creating unforgettable dining experiences. Through the Perrier-Jouët Society, the brand enables chefs to focus on blending sustainable and artistic culinary practices with the floral and elegant champagnes of Perrier-Jouët®, while exchanging culinary knowledge and insights. The recognition of Chef Anne-Sophie Nicolas highlights the alignment between her culinary philosophy and these values, and her exceptional talent in elevating the “Art of Dining.”

To commemorate this special partnership, Chef Anne-Sophie has meticulously crafted two signature dishes, available at Gaddi’s throughout March 2026. These creations are designed to perfectly complement the unique profiles of Perrier-Jouët champagnes: Tarte de Homard et Caviar ── Brittany Lobster Tart, Perseus Oscietra Caviar, Spinach, Cauliflowers, pairing with Perrier Jouet – Blanc de Blancs; and a special dish inspired by Perrier-Jouet Blason Rosé: Filet de Bœuf Australien ── Australian Beef Tenderloin, Wild Mushrooms, Potatoes, Rosé Champagne Veal Jus, pairing with Perrier Jouet Belle Époque Rosé 2014.

Besides the special menu, Perrier-Jouet Belle Epoque will also be offered as part of Gaddi’s wine by the glass selection as well as at the afternoon tea offer at The Lobby. Gaddi’s also offers Perrier-Jouet Grand Brut, Blanc de Blancs & Belle Epoque by the bottle listing.
